Chia seed parfait

Hey guys!

How has your week been?  Mine has absolutely flown by as I’m leaving for Spain on Monday!  I’m so excited because I’m going to stay with one of my best friends from all the way back to middle school, Marin.  She’s teaching English in Seville.  Aaaand I’m going to see one of my favorite people ever and good friend from college, the lovely Sarah (check out her awesome blog).  Next week is “La Feria” in Seville, which is a huge street festival that has roots reaching back to the 1800s.  I can’t wait to experience this amazing cultural event!

I’m also excited to create the first travel category post for this blog – all of my grocery budgeting really has paid off!  I’ll aim to post something before I leave, and will be taking a million photos while I’m in Spain to share with you all when I’m back.

Back to the food: This week I wanted to experiment some more with chia seeds.  Ever since I made my first batch of chia seed pudding, I knew avocado would be an amazing addition and up the creamy factor of the pudding even more.  So I decided to make a chocolate-avocado chia pudding.

I also had a bag of frozen berries that had been sitting in my freezer for a while, and I knew using them as a base would create a beautifully colored chia seed pudding/jam (I think it would be considered a jam but IDK lol).

They both turned out so yummy and pretty, and so I clearly had to layer them with some strawberries + coconut + almonds to create what I’m calling a chia seed “parfait”.  I had this for breakfast a few times this week and, besides being simply scrumptious, it was suuuper filling.  I hope you enjoy!



Chia seed parfait


Chocolate-avocado chia pudding

1/4 avocado

1 cup milk (any kind)

1 tbsp cocoa powder

2-3 tsp agave

1/3 cup chia seeds

Berry coconut chia jam

6 oz frozen mixed berries

1 tsp agave

1/3 cup coconut flakes

1/2 tsp vanilla


1/3 cup chia seeds


Chocolate avocado chia pudding

  1. Blend ingredients 1-4 in a blender.  Taste and add more agave if desired.
  2. Place chia seeds in a medium bowl and add blended ingredients; mix well.
  3. Let sit for at least 3 hours or overnight.

Berry coconut chia jam

  1. Add the frozen berries, agave, vanilla and 1/3 cup water to a saucepan over medium heat.
  2. Bring the mixture to a boil, then gently boil for around 15 minutes until the sauce has thickened a bit.
  3. Take off the heat and let cool for at least 5 minutes.
  4. Add the mixture to a blender along with the coconut flakes and 1/2 cup of water.  Blend until smooth.
  5. Add the mixture to a medium bowl along with the chia seeds.  Let site for at least 3 hours or overnight.

After the pudding and jam have fully formed, create the parfaits by layering the jam, and pudding, adding strawberries, coconut and almonds as you go.  Enjoy!
